Chocolate Buttercream Recipe
This is my favorite personal Chocolate Buttercream recipe.It's very close to my crusting buttercream but it's made out of butter. No vegetable shortening.
Since I live in a very hot area, I don't use this recipe for my clients, especially with stack cakes. The heat would make the cake too unstable since it's made with just butter. But those who live in colder areas might enjoy it more with their clients.
The recipe pipes beautifully as you can see in the photo to the left. It doesn't crust as my other crusting recipe
but it has enough crust that it can be smooth lightly with
viva paper and a light touch. I hope you enjoy!
1½ cups butter (3 sticks), softened
1 cup unsweetened cocoa
5 cups confectioner’s sugar
½ cup heavy cream or milk
2 teaspoons vanilla extract
½ teaspoon Nescafe powder or any instant coffee of your preference
*Cream together butter and cocoa powder until well combined.
*Add vanilla extract
*Add the Nescafe or Instant Coffee Powder to the heavy cream and combine well.
*Add sugar and milk to cocoa mixture by adding 1 cup of sugar followed by about a tablespoon of milk.
If frosting is too dry, add more milk, a tablespoon at a time until it reaches the right consistency. If it appears to wet and is too soft, add more confectioner’s sugar in small portions until it reaches the right consistency.
