Macadamia & White Chocolate Cookies
This is my favorite recipe for Macadamia Nut & White Chocolate Cookies. A friend gave me a few years ago some of her favorite dessert recipe and this one and chocolate cake recipe won my heart.

Ingredients:

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup light brown sugar, firmly packed
1/2 cup white sugar
1 cup salted butter, softened
2 large eggs
2 teaspoons pure vanilla extract
1 cup coarsely chopped macadamia nuts
1 1/2 cups white chocolate chips
Directions:
*Preheat oven to 350°F.
*In medium bowl combine flour, soda and salt. Mix well and set aside.
*In a large bowl with a mixer blend sugars at medium speed.
*Add butter and mix to until it forms a grainy paste.
*Add the eggs and vanilla. Beat at medium speed until fully combined.
*Add the flour mixture and mix.
*Add the macadamia nuts and white chocolate chip and fold manually into the batter.
*Cover well cookie batter. I divide it in half and make rolls, covering them with plastic wrap), and place in the refrigerator for a couple of hours or even overnight.
*Make balls with the cookie batter and then press them slightly so the form a disk.
*Place in the oven. The size and thickness of the cookie will determine the amount of time the cookie will need to bake.Usually between 15 to 20 minutes for a normal size cookie. Just make sure to watch the first batch so you can figure how longer they will take in your oven.
